This probably isn't the "right" way to do it, but placing them in mathmode
works. Just surround them with $ signs. As in 

$<$ iamatag $>$  stuff $</$ iamatag $>$

I have a book by Helmut Kopka and Patrick W. Daly which I keep close at
hand. It answers most of my basic questions. I'm not sure where to find
comprehensive online documentation; when I had to learn LaTeX for the
first time, I used the Harvard Math Dept guide at 
http://www.math.harvard.edu/texman/

but it's more focused on theorems and so on than what you may need.
This page http://www.maths.man.ac.uk/guides/latex/ also seems to have some
decent guides on it...
