Comment:

 Vidalia 0.2.9 on OS X has http, https, socks4 and sock5 options listed on
 my OS X 10.5 and 10.3 test systems.

 The settings are stored in ~/Library/Vidalia.  If that's not changing or
 being wiped, I'm unsure how Vidalia is forgetting your configuration.

 Can you run vidalia from Terminal as follows and post the resulting
 logfile?

 /Applications/Vidalia.app/Contents/MacOS/Vidalia -loglevel debug -logfile
 ~/vidalia-debug.log
