BTW, there are quite some GNUstep-based ones -- I've recently
produced a quarterly update of ALT Linux Starterkits collection
and -gnustep flavour has some half a dozen of educational apps:

I'm willing to include useful apps into LiveCDs as both part
of a topic collection and as a single-app demo image.
