I usually boot using the system rescue cd which contains partimage and a bunch of other very useful tools. http://www.sysresccd.org
Partimage does work in a client/server configuration, but I found it easier to just mount a NFS share from the server using the system rescue cd and write the images out to it. Could probably also mount a samba share using the cd, although I've never tried that.
