Some suggestions:
Separate TX and RX pairs as much as possible. Put a grounded trace
between them. You have them pretty close on your layout.
On the other hand keep the lines in a pair as close as possible and try
to keep their lengths identical.
Other than that I think it should work fine with just one layer. If I
recall correctly some people even recommend routing ethernet signals
through the PCB with no ground plane above or below.
