My backups include the following files and I hope those suffice:

  etc/mixminion/mbox.conf
  etc/mixminion/mixminiond.conf
  etc/mixminion/keys/identity.key
  etc/mixminion/blacklist.conf

If you're just updating a node I'd suggest to at least also save
the packet keys and the queues -- otherwise you'll invalidate all
packets still in transit resp. pending delivery:

  etc/mixminion/keys/key_*
  var/spool/mixminion/*

(Adjust path names as needed...)
