I don't know why you want to change it through the config editor or
maybe I don't understand, but I will play along :)

You have to set the following preferences:

extensions.torbirdy.proxy
2

extensions.torbirdy.custom.network.proxy.socks
network.proxy.socks
127.0.0.1 (host)

extensions.torbirdy.custom.network.proxy.socks_port
network.proxy.socks_port
9050 (port)

Just to reiterate what has been said: this is not a good way to do it
and it may break things, so just use TorBirdy's preferences.
