In my program there are two options for this item:

1) don't enter the item for the student.  When I enter grades I have the 
option  of assigning the task to the specific student or not.
2) have a cancel code - I use 'x' to indicate the item was cancelled

Either approach results in the assingment not being counted/scored.
Back in my spreadsheet grading days, the space was left blank if the 
assignment was not counted - This proved too inefficient for the 
subsequent program.
