As others mentioned you can use Samba and netatalk.
Netatalk will fo AFP over IP and if the AppleShare
client is new enough it will default to IP
(communication will initially be made via AppleTalk
and then switch to IP). 
You could put a PPC version of Linux on your Mac
server. It might integrate better with the rest of you
network but beware PPC support for Linux is spotty at
best. Unless you are a Linux guru and are intimate
with Mac hardware, leaving the Mac server on
Appleshare may be better but more limiting. Good Luck.
