I can't help with UK-specific legislation, but if it hasn't diverged too far from Australia, the answer is likely the same: "there are some legal protections for carriage services, but the protections applying to an open proxy operator have not been testing in court yet". (Of course, you should get UK-specific legal advice on that.) One other option is to try setting up a non-exit relay first, which is what we've done recently in Australia. Another option is to have a talk with your local police (or the relevant police group dealing with Internet activities), and let them know about Tor and your Exit relay. And let them know you don't keep any logs, and Tor can't identify the end user anyway by design. That keeps them informed, and gives them someone to contact if there are ever any concerns about your relay.
