Many (most?) wikis have version control. JSPWiki for one uses RCS when available, and a home-brew system when not.

Also, many (most ?) wikis can handle user privileges, and if not - the encompassing web server can do it for them.

CVS is so hard-core that even many software developers find it hard to use. I don't know of many good UIs which would be intuitive enough for children.

I *do* have positive experience with kids using Wiki, anyone interested in details - drop me a note.
