Just about any distribution will work fine. Just don't install packages that
aren't necessary.

I personally favor the Debian distribution. If you look at the FAI,
Fully Automated Installer ( http://www.informatik.uni-koeln.de/fai/ )
page you can setup a workstation configuration to be installable from
the server. Insert a boot floppy and walk away.

Look into kickstart for something similiar with Red Hat.

Also you could consider LTSP
(http://www.riverdale.k12.or.us/linux/k12ltsp.html) for something
classroom oriented. (It's redhat based)
