The definitions already given were good, but it's also nice to know what it's used for. One big use is to help with parts placement on the board. You can visually see how "tangled" the rats nest is as you move/rotate/flip components on the layout. They idea is to organize the parts so that the rats nest is the least tangled. The board design will be much better that way.
