Are you talking about training for students or staff? I provide a "intro to open source" type training, which is a class covering basic information on Linux filesystem, OpenOffice, Firefox, Thunderbird, and Gimp. This class normally goes along with the purchase of a migration package to these apps, but there is no reason why it could not be split off.
