If you're demoing something like Moodle, then I hope you'll consider Manhattan.
It doesn'et require either php or mysql -- easy install, easy to use.
Immediately useful to teachers.
Meanwhile, the set of Educational apps on k12ltsp 3 is great: includes TuxPaint
(a must), kstars (fantantic), kedu editor -- quiz builder (desktop) -- not to
mention the incredible out-of-the box samba browser and nfs /home.
(But Paul knows all this. ;-)
