To plug the fiber into your network you'll need to use "media
converters". I recommend Allied Telesysn - reasonably priced, and I've
had nothing but success with their products for years now.

As to the fiber, we've been using 6 stranded multi-mode. You only really
need two strand, one for TX and one for RX, but building in some
expandability is a good thing. We just ordered two runs of it from a
company that terminates the fiber for you (something you need
specialized - i.e. expensive - tools for, as well as some eperiance and
training), then wraps up the end and attaches a pulling eye, so all you
have to do is pull it through your conduit, unwrap the ends, and plug it
in. If you would like the vendor's name, let me know, and I'll get it
for you today at work.
