Ok good idea explicit removing the eeprom. 

My goal is to make as much as possible surface mounted. The exception will
be a few connectors.

The schematic is not really ready for release yet. Maybe after the weekend
(that sounds familiar from the last weekend).

About the PCB I don't know yet. I would probably be more glad if someone
else could do it. I assume you would use some of the free PCB tools.
