I did this by drawing a poly-clearing line in a complete box around my
text, which chops a hole in the poly.  I'd prefer an 'inverse rectangle'
but I don't know if it can be done...

A couple things to note:  The menu says "Lock Names" but it really means
"Lock Names and Text" (I've changed my own .res file to reflect this).
If you have this on, you can't manipulate text.

Also, if you are submitting your board to someplace with automated DRC,
the default font does not pass 8/8 rules (although PCB's DRC does not
notice or care).  I'm not really sure what to do about that if you want
copper text and use something like BatchPCB.  Where I ultimately had
my board built they didn't complain, but then they also built the board
with <8mil slivers in the planes.
