Of course, the super deluxe solution would be PoE but that is a recipe 
for project drag because now you'd have to add a litte switch-mode 
converter.

What we do in medical a lot where we need super patient isolation is 
ferrite transformers, choke, rectifier, linear regulator. That keeps it 
isolated, and in your case CAT5 has four pairs while you will only need 
two pairs per box. So ... you could even feed it from a wall wart 
(assuming you don't need a lot of power).

If they all got a different IP address wouldn't it work with just 
routers and hubs? The last 4:1 hub I bought was under $10, IIRC from 
Walmart. Plus a bootloader in the uC in case you need to re-flash that.

Then Ethernet would really be the ticket here.

Oh man, with tongue&groove enclosure and the whole nine yards. Cool. But 
I wouldn't put 10uF tantalums in there, or any tantalums. At least not 
with a wooden cabinet ;-)
