Haven't done anything with FreeNX myself -- have to try it.

Amount of memory also depends on what students are doing (ours have been known to run some pretty hefty stuff). More is better :). We have 2G and haven't run out (yet). 20 users should be achievable. The ltsp project (www.ltsp.org) has some recommendations.
