Probably my solution will not be good to you.
I allways made production from the .ps files, not the gerber files. A little
strange, but is the best for me.
So, I place the undesired silk text outside the board.
Then, I use pstoedit to convert the .ps to .sk and edit it in skencil.
Then I made my boards...
