LaTeX is fine for a thesis and text books, with many formulas, intended
to be printed and viewed as PDF.

For other documentation more versatile formats (with LaTeX backed) are
better. I think many projects use DocBook. But the wiki-book concept may
be fine too, I still have to learn both.
