Which is what I do.  Leave the footprint off the symbol and slap them 
all in later with gattarib.

In the case of AVR's -- It's not clear how much it buys you.  The pin 
#'s are different between DIP and TQFP packages.  I suppose if you are 
going between TQFP and MLF it helps.
