they have vested interest in making sure Mac OS X only runs on the hardware they manufacture,
That's probably the main reason, but I'm sure they also find it a lot easier not having to support a huge and open-ended variety of hardware configurations. They can sell a single hardware+software combination that's guaranteed to work.
